Looking at the engines on both my Vitamix and domestic Cuisinart, they are almost the same size. A Robo Coupe has an engine 4x the size of a domestic Cuisinart. The difference between a domestic Cuisinart and a pro Robot Coupes is the engine size. In pro kitchens, we use "Robot Coupes" which have bowls that are roughly the same size as a larger home version of the Cuisinart. I told him that I thought I would never spend $300+ on a blender but then killed 2 $100 blenders in a matter of a couple of months, so I sprang for the Vitamix and have never looked back. I was recently at Costco and struck up a convo with the Vitamix rep that was there promo-ing Vitamixers. In both cases, or whatever you end up deciding on, buy the BIGGEST MOST POWERFUL ENGINE you can afford. Waiting for soup or a sauce to cool off b4 putting it in a blender, takes time. Julia Child (who I had the pleasure of meeting in 1998) said her favorite appliance was an immersion blender bc you can puree something while it is still hot. Then you also have the other attachments to slice, dice, and shred. If you don't need to make smoothies and are looking to make things like pestos and hummus, while it is possible in a blender, nothing performs as well as a food processor for these tasks. If you make a lot of smoothies, you will have to go with a blender. I would lean toward investing in a good Cuisinart and just getting a less expensive immersion blender to do the blender tasks with the exception of smoothies. You cant make a smoothie in a Cuisinart and you cant chop veg properly in a blender (unless you want to do insanely small batches).
